Stevia Banana Cake Recipe



Ingredients
  1. 100 grams of unsalted butter
  2. 1 1/2 tbsp of grounded dried stevia leaves (equivalent to 190 grams of white sugar)
  3. 3 eggs, separated
  4. 1/2 tsp. of vinegar
  5. 1 tbsp. of vanilla extract
  6. 1/2 tsp. of banana extract
  7. 360 grams of banana, mashed
  8. 100 grams of wholemeal/wholewheat flour
  9. 140 grams of cake flour
  10. 1/4 tsp. of salt
  11. 1 1/4 tsp. of baking powder
Instructions
  1. Preheat oven to 180C or 160C fan-forced.
  2. Line parchment paper.
  3. In a bowl, whisk together wholemeal, cake flour, and baking powder. Set aside.
  4. Mash bananas.
  5. In a mixing bowl, beat egg whites and vinegar until stiff peaks.
  6. In another mixing bowl, cream together unsalted butter and stevia until light and creamy. Drizzle in egg yolks, vanilla extract and banana extract, continue beating until well combined.
  7. Stir in dry ingredients and mashed bananas into the mixture. Make sure that you do not overmix.
  8. Gently fold in egg whites a half at a time until evenly mixed.
  9. Transfer it into a loaf pan that has been greased and lined with parchment paper. Drop the pan to raise large air bubbles.
  10. Bake it in the oven for about 45 to 50 minutes.
  11. Let it cool in the pan for about 15 minutes and transfer on to the wire rack to further cooling.
  12. Serve.
Notes
  1. - If don't have cake flour, replace it with plain flour
  2. - Banana extract is optional
